This bread is so good. It originally came from Deidre's Bread on YouTube.
It took me a while to learn how to keep it from falling. Although it did, it is perfect now, and I also put my spin on it.
This bread is great for sandwiches. I don't miss bread anymore. With just a few changes,
I also make cinnamon bread, cinnamon rolls, and pizza. Use your imagination to see what you can
do with this recipe.
I love this bread and had everyone in the neighborhood wanting to learn how to make it, even the husbands. They would all come over to my house and I would teach them how to make their own.
Weigh out all dry ingredients and mix well with a whisk. Prepare the rest of your ingredients. In a separate bowl whisk lightly.
Add to machine and use the dough setting. Add in the order of your machine's instructions. Mine starts with the wet ingredients.
Just before the last rise, remove the dough and shape it into a loaf tightly to get some air out. Remove the paddle from the pan and place the dough back into the machine and let it finish. Gently remove the dough from the machine and place it in a sprayed pan to keep it from sticking if you have chosen to sub the Lupin flour for the Flax meal. If you use the Flax mill, don't oil the pan, it will help to hold the sides up. Place sprayed saran wrap over the bread loosely to allow the bread to rise.
Place the pan in a warm place to rise, like the microwave or the oven, with 2 cups of boiling water to help it to rise. It can take 30 minutes to 3 hours but start checking after 30 minutes, usually about an hour. Let rise to 1 inch above the pan and start baking.
Bake at 350F for 25 - 30 minutes. Place on a cooling rack to cool, and it is better that you don't slice until the next day because it will be too soft. Wait at least a couple of hours.
