Low Carb Cinnamon Rolls

These Rolls began with a recipe for a bread loaf from Deidre's Bread YouTube. Thanks, Deidre. I turned it into cinnamon rolls. I make a bread loaf, cinnamon rolls, hamburger buns, hot dog buns, dinner rolls, and pizza.

Description

These cinnamon rolls are delicious and also have a cream cheese frosting.

Ingredients
    Wet Ingredients
  • 200 g water ((I use tap water but ley it run hot))
  • 1 cup Egg ((large))
  • 1 tbsp Vanilla Extract
  • Dry Ingredients
  • 38 g Oat Fiber ((Not Oat Flour))
  • 8 tbsp Erythritol ((I use Anthony's from Amazon))
  • 84 g Flax Seed Mill ((I use Walmart brand brown Organic))
  • 192 g Vital Wheat Glution ((I use Anthony's from Amazon))
  • 1/2 tsp Xanthum Gum
  • 1 tsp salt
  • Filling
  • 1/2 cup Swerve Brown
  • 1 tbsp Cinnamon
  • 2 tbsp Butter ((Softened))
  • Wet Ingredients-2
  • 30 g Butter ((At room temperature))
  • 1 tsp Honey ((Honey is eaten by the Yeast so don't add to carb count.))
  • 1 tbsp Saf Yeast ((Or what yeast you use))
Instructions
    Weigh Ingredients
  1. Because bread making is very Precise, I weigh my ingredients.

    Weigh out all dry ingredients and blend together to blend well. Prepare the rest of the ingredients.

  2. Eggs

    In a separate bowl, whisk up the eggs. 

  3. Bread Machine Use Basic Loaf Cycle

    Add to bread machine in order of the machine instructions. Mine starts with water, the eggs. Second is dry ingredients then the salt around the edges of the pan and honey then the yeast on top of the dry. Use Basic Loaf Cycle setting and let it go through the 1st knead, rise, and 2nd  knead, so it kneads through 2 cycles, that is what makes the rolls so soft. After 2nd knead remove the dough from machine and roll out the dough. 

  4. Filling

    Spread butter on the dough, then sprinkle cinnamon mixture on top of the butter. Roll the dough into a log tightly. Cut a mark every inch or so to show you where to cut the rolls with some dental floss or knife. Place in the baking dish with 1/2 inch of space between them to allow them to rise. Preheat the oven to 170 for 1 minute and then turn it off. Add 2 cups of boiling water to a measuring cup and place it and the rolls covered with sprayed saran wrap in the oven to rise. Rise time can take anywhere from 1 to 2 hours to rise.  

  5. Baking

    Preheat oven to 350F and bake for 20-25 minutes. Allow to cool and then we will move on to the frosting.
