This recipe is full of pure goodness. It has chicken tomatoes and fresh vegetables. I made this for dinner tonight and my husband loved it. He said, don't change a thing. I made up this recipe as I was cooking it. I knew I wanted a vegetable chicken stir-fry but didn't have an exact plan, so I did it on the fly. It worked out fantastic. After dinner and cleaning the kitchen, I decided to hit the computer while the recipe is fresh in my head. This recipe can be served over Cauli Rice or Dream Fields Pasta, which is very healthy pasta. It is so healthy that it is recommended for diabetics. It is a little higher in carbs but at the same time, I think the healthiest pasta out there so, remember everything in moderation. This would also be incredible on Cauli rice.
Add oil to a pan and let it get hot. Add chicken and stir-fry for just a minute or 2 and add the Better than bullion chicken flavor, stirring until light brown. Test to make sure the chicken is done according to your meat thermometer.
Add the vegetables to the chicken, stirring until tender. Stir in garlic. Add canned tomatoes and let simmer over low heat while you are cooking the pasta.
Cook pasta according to the directions on the package, adding chicken broth to substitute part of the water called for on the package. When finished, drain the pasta well and dinner is ready.
